堅持健康原味,兩款秘製湯底每日現熬

銀米提供兩款各具特色的秘製湯底選擇。「招牌原湯」承襲雲南蒙自古法,以鮮雞及豬骨等十多種食材每日現熬 16 小時,湯色金黃澄澈。「野果酸湯」則採用雲南獨有香料,加入素有「萬壽果」之稱的雲南特產酸木瓜及樹番茄,天然的果酸交織出獨特的酸鮮滋味,不僅開胃誘人,更具有健脾胃、助消化等功效。搭配柔滑彈糯的滇中優質酸漿米線,吸飽山野精華,每一口鮮味皆顯珍貴。米線套餐定價為港幣 $68 – $128, 大家就能品嚐雲南原味道。

Following its sensational debut at K11 MUSEA last December and a successful expansion to Harbour City in February, the renowned Dali-based brand Yinmi is proud to announce the grand opening of its third Hong Kong branch in Times Square on 3rd May. The new flagship offers a spacious dining area with increased seating, continuing the brand’s signature aesthetic of warm wood tones and bespoke ethnic furniture. Complemented by a professional team in traditional attire, the venue offers a multi-sensory feast for both the eyes and the palate in an elevated, comfortable setting.

Dedicated to Authentic Flavors: Two Signature Broths Crafted Daily

Yinmi offers two distinct secret broths. The Signature Original Broth follows the ancient techniques of Mengzi, Yunnan, simmered for 16 hours with fresh chicken, pork bones, and over ten ingredients to achieve a golden, crystal-clear finish. For those seeking a vibrant alternative, the Wild Fruit Sour Soup features exclusive Yunnan spices infused with “Long-life Fruit” (Yunnan sour papaya) and tree tomatoes. This combination creates an unexpectedly refreshing tartness that stimulates the appetite while promoting digestion and spleen health. Both broths perfectly complement the premium rice noodles, capturing the very essence of the Yunnan highlands.

極致儀式感:還原正宗「過橋」與藝術擺盤

店內嚴格執行「三分鐘上湯儀式」,利用300度定製石碗確保湯底維持在98度黃金溫度。食客親手將包括雲南宣威火腿、牛肉、鮮蝦、鮑魚、鵪鶉蛋、新鮮蟲草花等近二十款配料依序入湯,瞬間鎖住鮮嫩。當中更特別引入由雲南直送、具有潤肺與增強免疫力之效的新鮮野生金耳菌,以及名貴的羊肚菌,兼具矜貴與健康。

The Ultimate Ceremony: Reviving Authentic “Bridge-Crossing” Traditions

Yinmi recreates the authentic Yunnan experience with a strict “Three-Minute Soup Ceremony.” Utilizing custom stone bowls heated to 300°C, the broth is served at the golden temperature of 98°C. Diners participate in the ritual by adding nearly twenty premium ingredients—including Yunnan Xuanwei ham, beef, fresh shrimp, abalone, quail eggs, and fresh cordyceps flowers—into the boiling broth in a specific order to lock in their natural tenderness. The experience is elevated by fresh wild Golden Ear Fungus flown directly from Yunnan, alongside prestigious Morel mushrooms for a truly healthy indulgence.

素米 — 雜錦野菌湯素米線

回應眾多素食客人的熱切呼喚,時代廣場和海港城分店均提供「素米」套餐 — 雜錦野菌湯素米線。九宮格木盒整齊排列著清鮮時蔬,包括竹笙、草芽、蕃茄與空心菜等。將黃牛肝菌、雞油菌等珍稀菌類與新鮮蔬菜依序撥入滾燙的野菌濃湯中,讓食材的清甜與野菌的奇香在石鍋中完美交融。

Su Mi: The Long-Awaited Vegetarian Experience

In response to popular demand, the Times Square and Harbour City branches now offer the Su Mi Set — Assorted Wild Mushroom Soup Rice Noodles. Presented in a classic nine-grid wooden box, a variety of fresh vegetables such as bamboo pith and grass shoots are served alongside rare mushrooms like Yellow Porcini and Chanterelles. As these ingredients are added to the piping hot mushroom broth, the natural sweetness of the vegetables and the earthy aroma of the wild fungi meld into a perfect harmony.

時代廣場新店與海港城店除了延續經典套餐外,還推出「銀米雲野」系列餐牌,呈現雲南山野美食的精髓。「雲南野生菌滋補養生雞湯鍋」匯聚了高山雪菌、金耳菌、羊肚菌、黑牛肝菌、龍爪菌及黑皮雞樅菌等多款雲南珍稀野菌,以鮮雞湯為基底慢熬。隨著野菌在鍋中翻滾,其精華與鮮甜悉數融入醇厚的湯頭中,湯底愈發鮮美芬芳;搭配爽滑煙韌的米線,讓食材吸飽濃郁菌香,是兼具滋補與極致鮮味的森林盛宴。

The “Yinmi Yunye” Menu: Times Square & Harbour City Exclusives

Beyond signature sets, the Times Square branch introduces the “Yinmi Yunye” menu. “Yunnan Wild Mushroom Nourishing Chicken Broth Pot” features a medley of rare Yunnan fungi—including Alpine Snow Fungus, Golden Ear, Morel, and Black Porcini—simmered in a rich chicken broth. As the mushrooms infuse the soup with their earthy sweetness, the broth becomes increasingly flavorful. Paired with springy rice noodles that soak up the luxurious essence, it offers a truly revitalizing and umami-rich experience.

Oil-Poached Seasoned Beef is a sensory masterpiece; the sound of hot oil splashing over seasoned beef creates an instant appetite, while the beef itself—pre-coated in egg wash—reaches an unparalleled level of silkiness.

Other must-try highlights include the aromatic Fried Rice with Porcini and Green Peppers, infused with the earthy fragrance of premium porcini, and the Traditional Copper Pot Rice Noodles with Minced Pork Sauce, which features a secret savory meat sauce and rich broth for a deeply layered flavor experience.

The snack menu offers a true taste of Yunnan’s diverse ethnic flavors. The Honey-Glazed Tamarillo (Tree Tomato) delivers a refreshing balance of sweet and tangy juices, while the Bai Style Mint Fried Pork Ribs are fried to a golden crisp and paired with fresh mint to cut through the richness.

For a bold kick, the Dai Style Mashed Potatoes are pounded with fresh lime and spices to achieve a dense, spicy, and sour texture.
