Following its sensational debut at K11 MUSEA last December—which captured the hearts of celebrities, food connoisseurs, and sparked daily queues—the renowned Dali-based brand Yinmi is proud to announce the grand opening of its fourth Hong Kong branch at The Wai in Tai Wai on 28 June, following its successful expansions to Harbour City and Times Square in February and May.
The new flagship location offers a highly spacious dining area with increased seating, seamlessly continuing the brand’s signature aesthetic of warm wood tones and bespoke ethnic furniture. Dedicated to Authentic Flavors: Two Signature Broths Crafted Daily
Yinmi remains fiercely dedicated to presenting pure, healthy, and authentic flavors through its two distinct secret broths. The Signature Original Broth inherits the ancient techniques of Mengzi, Yunnan, this broth is meticulously simmered for 16 hours with fresh chicken, pork bones, and over ten premium ingredients to achieve a golden, crystal-clear, and deeply flavorful finish. The Wild Fruit Sour Soup infused with exclusive Yunnan spices, this vibrant alternative features tree tomatoes and Yunnan’s sour papaya, famously known as the “Long-life Fruit.” The natural fruit acidity creates an appetizing, refreshing tartness that stimulates the palate while promoting digestion and spleen health.
Both broths perfectly complement the premium, silky, and chewy premium rice noodles sourced from central Yunnan, which beautifully absorb the essence of the highlands. With rice noodle sets reasonably priced between HKD $68 and $128, diners can experience the genuine taste of Yunnan without compromise.
極致儀式感：還原正宗「過橋」與藝術擺盤
店內嚴格執行「三分鐘上湯儀式」，利用高達 300 度的定制石碗，確保湯底維持在 98 度的黃金溫度。上檯時，食客可親手將包括雲南宣威火腿、牛肉、鮮蝦、鮑魚丸、鵪鶉蛋、新鮮蟲草花等近二十款豐富配料依序入湯，瞬間鎖住食材的鮮嫩與營養。為了提升食藝層次，餐廳更特別引入由雲南直送、具有潤肺與增強免疫力之效的新鮮野生金耳菌，以及名貴的羊肚菌，兼具矜貴意頭與健康價值。
The Ultimate Ceremony: Reviving Authentic “Bridge-Crossing” Traditions
Yinmi meticulously recreates the authentic Yunnan dining ritual with a strict “Three-Minute Soup Ceremony.” Utilizing custom stone bowls heated to 300°C, the nourishing broth is served at the golden temperature of 98°C. Diners then participate in the ritual by adding nearly twenty premium ingredients—including Yunnan Xuanwei ham, beef, fresh shrimp, abalone balls, quail eggs, and fresh cordyceps flowers—into the boiling broth in a precise order to instantly lock in their natural tenderness and nutrients.
The gastronomic experience is further elevated by precious wild Golden Ear Fungus flown directly from Yunnan—celebrated for its lung-nourishing and immunity-boosting properties—alongside prestigious Morel mushrooms, offering a truly luxurious yet healthy indulgence.

除了經典的「金、銀、銅、素米」系列，大圍分店更矚目推出全新特色石鍋米線，提供四款豐富主料選擇。「全家褔米線」匯聚宣威火腿、竹笙、牛肉、鮮蝦、烏魚片、魚肉春卷、鮑魚丸、鵪鶉蛋，以及高原特產「草芽」、雲南菊、蟲草花、玉蘭片、豆腐絲與秘製辣肉醬等近二十款海陸山珍。「牛魔王米線」 包含牛展、牛肉、爆汁牛丸，搭配秘製辣肉醬與香脆炸魚皮，肉香濃郁、層次豐富。「滇味魚鮮米線」嚴選滑嫩鮮魚片、魚肉春卷、魚蛋與爽脆竹笙，伴以招牌辣肉醬及香脆炸魚皮，完美呈現江河鮮味。「豬圓肉潤米線」嚴選爽口貢丸與鮮美豬肉丸，融入靈魂辣肉醬並配上香脆炸魚皮，帶來肉汁豐盈的純粹滇味。湯底更可自由搭配：經典原湯、酸湯、番茄湯或麻辣湯，滿足不同口味偏好。

In addition to the classic “Gold, Silver, and Bronze” rice noodle series, the Tai Wai branch proudly debuts a brand-new selection of Special Stone Pot Rice Noodles, featuring four indulgent variations. Including All-in-One Rice Noodles, Beef Lover’s Rice Noodles, Yunnan Fish & Seafood Rice Noodles, and Pork Bliss Rice Noodles. Diners can customize their experience with a choice of four signature soup bases: Original, Sour, Tomato, or Spicy Mala.
