Following the immense success of its first Hong Kong flagship at K11 MUSEA, which opened last December, the renowned Dali-based brand Yinmi is proud to announce the grand opening of its second branch in Harbour City. 「銀米」承襲雲南蒙自古法，以鮮雞及豬骨等十多種食材秘製湯底，每日現熬 8 小時，湯色金黃澄澈。搭配柔滑彈糯的滇中優質酸漿米線，吸飽山野精華。由於湯底每日限量供應，每一口鮮味皆顯珍貴。
Dedicated to Authentic Flavors, Featuring Secret Broth Simmered for 8 Hours
Yinmi remains dedicated to its “Original & Healthy” philosophy. Following the ancient techniques of Mengzi, Yunnan, the signature broth is prepared daily by simmering fresh chicken, pork bones, and over ten types of seasonal ingredients for eight hours. This golden, crystal-clear soup perfectly complements the smooth and springy rice noodles sourced from Yunnan. To ensure peak freshness, the broth is prepared in limited quantities daily, making every bowl a precious delicacy.
極致儀式感：還原正宗「過橋」與藝術擺盤
店內嚴格執行「三分鐘上湯儀式」，利用300度定製石碗確保湯底維持在 98度黃金溫度。食客親手將包括雲南宣威火腿、脆炸香酥肉、鮑魚、鵪鶉蛋、新鮮蟲草花等近二十款配料依序入湯，瞬間鎖住鮮嫩。當中更特別引入由雲南直送、具有潤肺與增強免疫力之效的新鮮野生金耳菌，以及名貴的羊肚菌，兼具矜貴與健康。
Reviving the Authentic “Crossing” Ceremony for a Memorable Dining Experience
To recreate the authentic Yunnan experience, Yinmi features a “Three-Minute Soup Ceremony”. Utilizing custom stone bowls heated to 300 degrees, the team ensures the broth remains at the golden temperature of 98 degrees upon serving. Diners personally participate in the “bridge-crossing” by adding nearly twenty classic ingredients—including Yunnan Xuanwei Ham, Crispy Fried Pork, Abalone, Quail Eggs, and Fresh Cordyceps Flowers—into the boiling broth in a specific order to lock in tenderness. The set also features rare wild Golden Ear Fungus flown in daily from Yunnan, known for their lung-nourishing and immunity-boosting properties, alongside precious morel mushrooms for a truly healthy indulgence.
